Ok. So I had some time after have a 3 day migraine and helping Laura whelp her puppies and went to Pioneer Woman's blog to see what's up. She has the best recipes. She's not so famous because she is a bad cook and has no sense of humor. Anyone that gets some 45,000 comments on one post is my BLOG IDOL! O m g.
Anyway, the recipe after Thanksgiving struck a cord with me and even though I didn't have any leftover turkey to use, it was still in my mind to make it last week. But then the migraine came and the puppies and I just seemed to be busy doing other stuff. Like laying in my bed for hours and Laura's bed between puppy contractions.
Here is the recipe.

I got chicken and cooked it but did other stuff while it cooked. The meal was so good T said it might have been the best thing I've ever made. But if you look at it you will notice why. It has so much FAT in it it's unbelievable. And there's nothing wrong with that if your man is happy.
My problem is this: It SAYS: Prep Time: 30 Minutes. Cook Time: 20 Minutes. Difficulty: Easy. Whatever.
I SWEAR I started the process at 4:30. T was outside with a friend and I proceeded to read the recipe and then chop and cut up shit. I also opened a bottle of Chardonnay because it called for some white wine. Of course I poured myself a glass. Or two.
Then it's 5pm and I feel like I've gotten NOWHERE. I barely have my kitchen organized. I spoke with Laura. Then I spoke with Linda. All with my headset so I was hands free. Both Laura and Linda thought it had something to do with the wine. What a weird comment.

I cook the mushrooms but I think I did it wrong. PW said to quarter them. I do that but my mushrooms don't look like her mushrooms. I also only used 8 oz. instead of 16 oz. which is what the recipe calls for. There I should have save a bunch of time. Oh no. It just goes on and on.

I OBVIOUSLY cut these up wrong. My mushies do not look like PW's mushies. She cut them up different.

Then it's the black olives. I think she used pre-cut olives and just said she used her chopper thingy thing and lied. I did mine by hand. Every single last black olive.
I got to the end of this 30 minute ordeal and served T dinner at 6:30. That included the 20 minutes in the oven. So that would be 2 hours to make this meal. It's so exhausting cooking every night. It was really good, and I think I've got him trained to think one good meal a week is impressive by me......I am often times impressed too. But.....how do women do it with their dogs and horses and chickens and goats????? God forbid I do any artwork!!! Geeezzzzzzzzzzzzz..................

The very tasting, extremely fattening, long winded meal. With 1 or 2 glasses of Chardonnay, it is perfect. But, don't be looking to me to help you cook cool meals. That'd be someone else. I just hold on for dear life and then hope it comes out right! This was REALLY tasty though!! You must try it!!
